Ingredients

420 g (3.5 cups) gluten-free / plain flour

1/4 tsp slightly rounded xanthan gum if using GF flour

400 g (2 cups) granulated sugar

2 tsp bicarbonate of soda / baking soda

180 ml (3/4 cup) vegetable oil / sunflower oil

2 tbsp white or apple cider vinegar

1 tbsp vanilla extract
-
480 ml (2 cups) water
Steps

Preheat the oven to gas 4 / 180C / 350F and grease & line a 9″× 13″ ovenproof dish or tin

Make 3 large wells in the flour. In 1 put the oil, in another the vinegar and in the 3rd the vanilla

You can use 2 x 8″ round tins baked for around 35 minutes or 24 cupcakes will take around 25 minutes
