  1. 1/4 swede, diced (160g)

  2. 2 carrot, chopped (140g)

  3. 1 small leek, thickly sliced (100g)

  4. 1 small onion, chopped (50g)

  5. 50 grams barley (or rice if gluten-free)

  6. 850 ml hot vegetable stock


  1. Put the chopped vegetables and barley / rice in a large saucepan

  2. Add the hot stock and bring to a boil

  3. Cover and turn the heat down, let simmer for 45 minutes

  4. Serve!
