200 g Golden Syrup

100 g gold foil wrapped Stork Margarine block / butter

50 g caster sugar (superfine)

50 g light brown sugar

1 tbsp milled flax / linseed

3 tbsp boiling water

150 ml light coconut milk

200 g gluten-free self raising flour

1/4 tsp slightly rounded xanthan gum

1/4 tsp baking powder

Extra 2 tbsp Golden Syrup for topping

Preheat the oven to gas 3 / 150C / 300F and line a 2lb loaf tin
