Ingredients

4 servings

  1. 100 grams sunflower spread / butter

  2. 100 grams sugar, white or brown

  3. 2 medium over ripe bananas, well mashed

  4. 3 tbsp milk of choice – gluten free flour will need a little extra

  5. 100 grams plain / gluten-free flour

  6. 2 tsp ground cinnamon

  7. 3/4 tsp baking powder

  8. 1/2 tsp baking soda / bicarb

Steps

  1. Put the butter into a microwave safe glass dish or bowl, litre sized, and heat on high until melted, 30 seconds or so

  2. Mix the milk, sugar and mashed bananas into the melted butter, then mix in the flour, cinnamon, baking powder and soda

  3. Heat on high (my microwave is 800W) for 8 – 10 minutes or until risen and cooked right through. It’ll pull away from the sides of the bowl when done

  4. Serve immediately with custard, ice cream or caramel sauce
