  1. 450 grams gluten-free / plain flour – see my flour mix below

  2. 2 tsp baking powder

  3. 1/2 tsp xanthan gum if using gluten-free flour

  4. 1 tsp garlic powder

  5. 3/4 tsp low-sodium salt

  6. 1 tsp dried oregano

  7. 1 tsp dried basil

  8. 1 pinch chilli powder

  9. 360 ml sparkling (carbonated) water

  10. 2 tbsp olive oil

  11. 2 tbsp maple syrup


  1. Preheat the oven to gas 7 / 210C / 425°F and line 2 baking sheets with parchment paper

  2. Make a well in the middle and pour in the oil and syrup

  3. The dough should be like a thick cake batter so mix in the water until it reaches that stage. You may not need it all. You could also add some food dye at this stage if you wanted to

  4. Spoon the mixture into a piping bag

  5. Snip a 1cm wide end and pipe wiggly lines, spaced evenly apart along each baking sheet, then bake for 18 – 22 minutes or until done
