Ingredients

240 g gluten-free / plain flour (2 cups)

1/4 tsp xanthan gum if using GF flour

200 g granulated sugar (1 cup)

200 g soft brown sugar (1 cup)

130 g cocoa powder (3/4 cup slightly rounded)

1 tsp baking powder

1 tsp baking soda

250 g gold foil-wrapped Stork margarine, cubed (1 cup)

60 ml light coconut milk (1/4 cup) plus extra as required

1 tbsp vanilla extract

175 g Enjoy Life chocolate chips (1 cup – optional)
Steps

Preheat the oven to gas 6 / 200C / 400F and line a baking sheet with parchment paper. (This recipe makes 2 batches so if your oven is big enough, line 2 sheets)

Let stand on the tray for 5 minutes then transfer to a wire rack to cool completely
