  1. 225 ml olive oil

  2. 90 ml sweet red wine

  3. 45 ml fresh orange juice

  4. 35 g granulated sugar

  5. 25 g roasted sesame seeds

  6. grated zest of 1/2 an orange

  7. 1/2 tbsp ground cinnamon

  8. 1/2 tsp ground cloves / cardamom

  9. 1/4 tsp baking soda / bicarb

  10. 500 g gluten-free / plain flour

  11. 1/2 tbsp baking powder

  12. 1/4 tsp xanthan gum if using gf flour

  13. soft brown sugar as required


  1. In a large bowl, mix together the oil, wine, orange juice, granulated sugar, sesame seeds, orange zest, cinnamon and cloves

  2. Sieve the baking powder, baking soda and xanthan gum with the flour into the bowl and knead until you form a soft dough. If using gluten-free flour, keep a handful of flour back and add it to the mixture only if required

  3. Preheat the oven to gas 3 / 170C / 325F and line a large baking sheet with parchment paper

  4. Pinch off golfball-sized pieces of dough and roll into thin sausage shapes

  5. Form into an ornate S shape as shown and place on the baking sheet

  6. Sprinkle with the brown sugar and bake for 25 – 30 minutes

  7. Let cool for 5 minutes on the tray before transferring to a wire rack to cool
