Ingredients

2 servings

  1. 90 g (1 cup) gluten-free rolled oats

  2. 360 ml (1.5 cups) light coconut milk

  3. 1 small carrot, grated / shredded

  4. 4 tbsp raisins

  5. 1 tsp ground cinnamon

  6. 1/2 tsp vanilla extract

  7. 1/4 tsp ground ginger

  8. 2 tbsp pineapple tidbits or maple syrup to sweeten

  9. 2 tbsp chopped walnuts / pecans – optional

Steps

  1. Simply combine the ingredients in a bowl and mix together well

  2. Divide between 2 or 3 containers, cover and let sit in the fridge overnight so the oats absorb the milk

  3. In the morning, stir and enjoy, topped with some extra grated carrot!

  4. This is just as delicious cooked through like ordinary porridge. Throw it all in a saucepan and simmer until thickened
