360 ml (1.5 cups) light coconut milk

1 small carrot, grated / shredded

4 tbsp raisins

1 tsp ground cinnamon

1/2 tsp vanilla extract

1/4 tsp ground ginger

2 tbsp pineapple tidbits or maple syrup to sweeten

2 tbsp chopped walnuts / pecans – optional

In the morning, stir and enjoy, topped with some extra grated carrot!
