Ingredients

8 servings

  1. 80 ml full fat coconut milk

  2. 1/2 tsp lemon juice

  3. 240 g gluten-free / plain flour

  4. 1/4 tsp xanthan gum if using GF flour

  5. 2 tsp baking powder

  6. 1/2 tsp bicarb / baking soda

  7. 112 g gold foil-wrapped Stork margarine (vegan butter), cubed

  8. 4 tbsp golden syrup / honey

  9. cinnamon topping

  10. 1 tbsp soft brown sugar

  11. 1/2 tsp ground cinnamon

  12. glaze

  13. 100 g icing sugar / powdered sugar

  14. 4 tbsp coconut milk

  15. 1/2 tsp vanilla extract

Steps

  1. Stir the lemon juice and coconut milk together and set aside

  2. Preheat the oven to gas 6 / 200C / 400F and ready a baking sheet

  3. Mix the flour, xanthan gum if using, baking powder and bicarb together

  4. Cut in the cubed butter with a pastry knife or a fork until the mixture looks like crumbs

  5. Mix the milk and syrup in and form a dough

  6. Lay a square of parchment paper out and pat your dough down into a 1/2 inch thick round

  7. Cut into 8 triangles

  8. Mix the brown sugar with the cinnamon

  9. Glaze the dough with some coconut milk and sprinkle with the brown sugar cinnamon mixture

  10. Bake for 15 minutes

  11. Let cool a little on the tray before separating out the triangles then bake a further 8 – 10 minutes or until set

  12. Mix the icing sugar, milk and vanilla together, adding enough milk to make a thick glaze

  13. Drizzle over the scones before serving

  14. Delicious!
