Ingredients

4 servings

  1. 60 g sunflower spread / butter

  2. 60 g gluten-free flour

  3. 570 ml light coconut milk plus extra if required

  4. dash nutmeg

  5. to taste salt & white pepper

Steps

  1. Start by melting the butter in a saucepan on a low heat

  2. Stir in the flour and cook for 2 minutes until drying and the floury taste has cooked out

  3. Gradually add the milk, whisking continuously to avoid getting lumps in the finished sauce

  4. Keep adding milk until you reach the consistency you want

  5. Season to taste and it’s done!

  6. At this stage you can use it in a chicken pie with mixed vegetables and pastry. Or see my ocean pie recipe on how to use it with fish

  7. My mum served it with cooked, chopped chicken or with spaghetti and as kids we loved it. You could add chopped sausage, bacon or use it in a lasagne. I have a fab free-from lasagne recipe posted!

  8. Here I’ve stirred chunks of cooked chicken and tinned sweetcorn in after thickening the sauce and simply heated it through
