  1. 280 g (2 cups) plain / gluten-free flour

  2. 1/4 tsp xanthan gum if using GF flour

  3. 1 tbsp baking powder

  4. 1/2 tsp ground cinnamon

  5. 112 g (1/2 cup) Vitalite margarine / safe ‘butter’ of choice

  6. 6 tbsp light brown sugar

  7. 120 g (1 cup) small diced apple

  8. 2 heaped tbsp applesauce

  9. 60 ml (1/4 cup) light coconut milk

  10. Topping

  11. 1 tsp melted ‘butter’ of choice

  12. Light brown sugar as required for topping


  1. Preheat the oven to gas 6 / 200C /400F

  2. Line a baking sheet with parchment paper

  3. Mix the flour, xanthan gum if using, cinnamon and baking powder together in a bowl

  4. Cut in the ‘butter’ with a fork then mix in the sugar

  5. Mix in the applesauce, milk and chopped apple and form a soft, slightly wet dough

  6. Pat the dough out on the tin to a circle around 1 inch thick, score into 8 wedges with a sharp knife and bake for 15 – 20 minutes until golden and set

  7. Brush with the melted ‘butter’ and sprinkle with the brown sugar

  8. Cut the wedges out properly then let cool to serve
