St Patricks Day Shamrock Toasted Muffins, GF DF EF SF NF

Just a cute themed snack idea for St Patricks Day, an open cucumber and cream cheese sandwich lol

Ingredients

4 servings

  1. 4 English muffins – see my gluten-free vegan recipe

  2. 225 g Violife brand cream cheese or see my free-from recipe

  3. 24 slices cucumber

  4. 75 g shredded Violife cheddar style cheese (optional)

  5. 8 thin slices of green bell pepper

  6. to taste salt

Steps

  1. Split the muffins in half and toast them on each side

  2. Mix the cream cheese and shredded cheese together (if using) and spread on each muffin

  3. Place 3 pieces of cucumber on top of each muffin and use the sliced peoper to make the shamrock stalk

  4. Sprinkle a little salt on top and serve
