I Cannot Believe It Is Turkey Meatloaf ~ Easily Gluten Free

Ingredients

  1. 3/4 cup quick-cooking oats, GF certified if needed

  2. 1/2 cup unsweetened almond milk (or skim milk)

  3. 1 medium onion, peeled (divided)

  4. 2 pounds ground turkey (I use Jennie O Lean)

  5. 1/2 cups chopped red bell pepper

  6. 2 eggs, beaten

  7. 2 teaspoons Worcestershire Sauce, make sure GF if needed

  8. 1/4 cup ketchup

  9. 1/2 teaspoon salt

  10. fresh ground black pepper

  11. 1 (8 oz) can tomato sauce

Steps

  1. Preheat your oven to 350 degrees.

  2. In a small bowl, stir the oats and milk together.

  3. Thinly slice 1/4 of the onion and set it aside.

  4. Finely chop the remaining onion.

  5. In a large bowl combine the turkey, oat mixture, chopped onion, bell pepper, eggs, Worcestershire Sauce, ketchup, salt, and a few grinds of pepper. Mix just until well combined.

  6. Transfer the mixture into a 9 by 13 inch baking dish. Shape into a loaf about 5 inches wide by 2 1/2 inches high.

  7. Pour the tomato sauce evenly over the meatloaf.

  8. Spread the sliced onions evenly over the top.

  9. Bake for about 1 hour or until a meat thermometer registers 160 degrees.

  10. Remove from oven and let rest for 10 to 15 minutes before slicing and serving.
