Banana bread (Healthy GF version)

Gluten free, vegetarian.

Ingredients

  1. 150 g gluten free plain flour

  2. 75 g buckwheat flour

  3. 50 g flaxseed/linseed ground mix

  4. 110 g butter or coconut oil (melted)

  5. 30 g coconut sugar

  6. 1 tbsp (optional) cocoa powder

  7. 1 tbsp vanilla essence

  8. 2 tbsp cinnamon powder

  9. 2 tbsp honey

  10. 3 large or 4 small ripe bananas

  11. 1 egg

  12. 1 tsp baking powder

  13. 1/2 tsp bicarbonate soda

  14. 4 tbsp milk (or almond milk)

Steps

  1. Preheat the oven to 180 degrees and prepare a loaf or cake tin (grease with butter or coconut oil)

  2. Mix all the ingredients in a bowl until fully combined. I use a blender/food processor. Pour into the tin. I drizzle a small amount of honey on the top of the cake before putting into the oven.

  3. Bake for 50mins.

  4. Remove from oven and let cool. Eat while still warm. Enjoy!
